The Duke Cookbook

In 2010, the pub published its first cookbook, 'Geetie's Cookbook: Recipes from the kitchens of The Duke of Cambridge Organic Pub' (available now on Amazon). Geetie and head chef Sara Berg have collected together recipes for over 100 of their specialities, arranged according to the four seasons. Fish, meat and vegetables get a variety of treatments – grilled, baked, steamed or roasted – all procedures that intensify flavour. Taking simple, everyday seasonal ingredients, the cookbook will help you transform them into dishes that taste so much more than ordinary.

The stylishly illustrated book also offers an in-depth look at the guiding principles behind the UK's only certified organic gastropub, and discusses why eating organic is so much better for society and for the Earth itself.
