
Ethical Business
At The Duke of Cambridge, we believe passionately that running a good business is impossible without ensuring that high ethical standards are practised at every level of the company’s day-to-day running. We think that businesses should act responsibly with a moral code of conduct – driven by strong values and a sense of contribution towards society, not just focussed on money, growth and greed.
Our buying policy
We source all our food ethically and responsibly - all our organic suppliers are small local independent farmers, growers and producers, and small independent brands. We never buy anything from big multinationals. By placing regular orders with small farms and producers, we are enabling them to expand and grow their businesses in turn.
Our energy policy
We are passionate about treating the environment with respect – we use methods that are groundbreaking within the restaurant trade. We recycle and re-use building materials, furniture, kitchen waste, tin, paper, card, corks and glass. We compost all our food waste, and the pub’s electricity is solar and wind-generated. We use recycled furniture and green cleaning products and keep a beady eye on all our energy use.
Our links with the local community
The Duke of Cambridge isn’t just a great place to enjoy good organic food and drink – we work hard to foster strong links between the pub, local residents and schools. Our chefs have trained local school cooks at Thornhill Primary School to devise menus and make healthy, delicious meals, using produce from our organic suppliers. Currently 400 children enjoy the new-style school meals, and the scheme is growing from strength to strength.
More recently we are working with Kate Greenaway Nursery helping them train and recruit a team to run a community kitchen. Sourcing local – field grown, seasonal, organic ingredients to create inspiring and educational meals in a wonderful environment.
We also worked with Highbury Fields Secondary School in July 2008, where we took over the school kitchens for two days and taught 70 'Year 8' girls how to create their own restaurant. We trained them as chefs and waitresses, and supervised them to cook and serve healthy organic food for 250 of their fellow students, teachers and peers. This gave them an enormous sense of satisfaction and taught them all about healthy sustainable eating.
